What to make for dinner this week - Easy One Pot Meals


Hope you are all having a wonderful start to December! This can be a busy and stressful time of year, between hosting holiday festivities, cookie baking, kid performances... you name it. But it turns out, you still need to eat dinner!

This week I'm sharing some really easy one pot/pan meals that are packed with good-for-you ingredients. Amidst the hullabaloo of December, let's worry less about dishes and enjoy this festive, cozy time of year!

  1. Turkey Chili with Black Beans and Vegetables - cooked in the slow cooker, on the stovetop, or in your pressure cooker! It’s super flavorful and nutritious (chock full of veggies – zucchini, corn, tomatoes, and peppers, black beans, and lean ground turkey). It’s a cheap recipe to make, especially because the whole batch uses only one pound of ground turkey.
  2. Sheet Pan Pork Chops with Apples and Sweet Potatoes - everything is tossed with a mixture of olive oil, rosemary, whole grain mustard, and maple syrup for a perfect balance of sweet, tangy, and earthy flavors.
  3. This Egg Roll in a Bowl is everything you love about an egg roll, made in one skillet in only about 20 minutes. Aromatics are sautéed with ground pork (or other meat or meat substitute), cabbage, and carrots in a simple umami-packed sauce for a cheap one-pot meal the whole family will love!
  4. One Pot Quinoa and Black Beans has been a favorite easy and healthy weeknight recipe for me for years. It’s packed with nutrient-dense ingredients and tons of flavor from sweet corn, bell peppers, onions, and spices. It’s a perfect weeknight vegan/vegetarian, gluten-free, plant-based recipe that’s hearty, filling, and the whole family will love it!
  5. Greek Shrimp with Tomatoes and Feta Cheese, is a one-skillet, easy recipe that’s packed with bright, fresh flavors. And it takes only 25 minutes! Serve with a loaf of crusty bread to mop up all the sauce.

You've likely already been getting bombarded with Thanksgiving recipe content. But you have to eat regular dinners during the holiday season, too! With everything being so hectic this time of year, I wanted to share some of my favorite super fast, minimalist recipes I make for dinner during busy times.
