5-ingredient, 20-minute easy dinners for this week

You've likely already been getting bombarded with Thanksgiving recipe content. But you have to eat regular dinners during the holiday season, too! With everything being so hectic this time of year, I wanted to share some of my favorite super fast, minimalist recipes I make for dinner during busy times.

These recipes are 20 minutes or shorter to make from start to finish, with 5 or fewer main ingredients and very minimal prep work.

  1. Spaghetti with tuna and butter (Spaghetti Tonno e Burro in Italian) is exactly what it sounds like, and takes only about 10 minutes. Just 3 main ingredients, lots of fresh cracked pepper, and the only thing you have to cook is the pasta! Get a bagged caesar salad kit to go with and you have yourself a fast feast.
  2. Nothing like a quick sear on a tuna steak for a meal that takes mere minutes to throw together! Ahi tuna steaks are coated in an umami-packed marinade and thrown in a hot skillet for only a minute or two on each side. Throw a bag of steamable frozen green beans and/or rice in the microwave to go with.
  3. These Korean BBQ Sloppy Joes are so simple and easy. Just cook up some ground beef with peppers and onions, throw in some store-bought Korean BBQ sauce, and serve on a bun like you would a sloppy joe!
  4. Greek Chicken Bites are delightful little all-purpose morsels. Add them to a Greek salad, stuff in a pita pocket like a gyro, or serve them with your favorite dipping sauce.
  5. Who says you can't have sandwiches for dinner? Smashed chickpea salad is the vegetarian/vegan alternative to tuna or chicken salad and is absolutely delicious. This one technically has a few more than 5 ingredients but many are just herbs and spices you probably already have on hand. Turn it into a chickpea melt, like you would a tuna melt, if you want something warm and cozy!

Happy quick and easy cooking,
Elizabeth
