Thanksgiving desserts that aren't pie!

I don't know... I think pie is a little much after a big Thanksgiving meal. Are any of you with me?

Surely those aren't crickets I hear in the distance...?

Or maybe you want a pie or two (or like seven, if you're anything like my extended family!) and another option for a sweet bite after your Thanksgiving meal to offer your guests.

All of these are make ahead, with no reheating required!

  1. This pumpkin chai tiramisu is a showstopper. And it's better served the next day or two, so it's perfect to make ahead. Served cold, just slice it right after taking it out from the fridge. It's cool and creamy and the perfect pick-me-up after a sleepy turkey meal.
  2. From-scratch pumpkin pudding has all the taste of pumpkin pie, without the crust. Again, we're making this ahead by a day or two and serving cold straight from the fridge. I like to crumble up pieces of gingersnaps to garnish it, along with whipped cream.
  3. Or maybe you're more of a cookie person? These pumpkin oatmeal cookies are studded with cranberries and dark chocolate chunks, and these cranberry orange biscotti are the perfect thing to dunk into your post-dinner tea or coffee. These are lovely to send home with your guests, too, since they hold up for days - who says cookies are just for Christmas?

Happy cooking,
Elizabeth
