What to cook for dinner this week

Looks like some frigid weather is coming for much of the US and Canada this week. Here in Rhode Island we'll be teetering on freezing temps (oh goodness, I've gotta get going on planting my bulbs!!).

Here are six cozy and warm recipes to make this week.

  1. This is one of my favorite pasta recipes, featuring a spicy and briny red sauce packed with olives, capers, and anchovies. There's just something about pasta with red sauce in the cold weather! Puttanesca sauce isn't the kind you need to simmer all day - the whole recipe only takes 25 minutes. Tip: I like to add shrimp to poach in the sauce for a bit more protein.
  2. I'm tapping into my nostalgia with this recipe for an old-school cafeteria favorite. But this isn't your school cafeteria lady's version. Homemade Salisbury steak is like a big meatball (or a small meatloaf?), pan-seared, and topped with a homemade mushroom gravy. I like to serve it over mashed potatoes. THE COZIEST.
  3. This Greek orzo and ground beef recipe is a weekly occurrence in our house. Every single time I share this with a family with picky kids, they come back singing its praises. It's made in one pot in about a half an hour with only a handful of ingredients, including a very uniquely Greek spice flavor combination.
  4. I recently got a hankering for these vegetarian stuffed mushrooms and I'm planning on making them this very evening with a side salad. They're cozy and warm but still light and healthy - plus, they're easy to make ahead and pop in the oven when you're ready to cook. If you're already thinking about menu planning for Thanksgiving, you may consider these as they're always a crowd pleaser!
  5. I can't not include a cozy, hearty chicken soup recipe in this cozy foods list. Creamy chicken and rice soup is the ultimate comfort food. And since it uses rotisserie chicken, most of the work is done for you.
  6. For a lighter (but still cozy!) soup option, this beautiful, golden soup features turmeric as the star of the show. With chickpeas, orzo, and spinach, and a squeeze of fresh lime juice at the end, you'll be warmed inside and out by this incredibly nutritious and gorgeous soup.
